Over the past 7 or 8 years of home roasting, I have worked my way from an air roaster doing 4 ounces to the Behmor 1600 and now the Hottop. Was satisfied with all, at the time, and it was a good learning curve. But, after years of coaxing adequate roasts out of the Behmor using a ton of work-arounds, decided to take the big step up. I will never go back.

The Hottop gives me the control necessary to get the roast I desire: for example, to shut down heat and kick on fan as 1st crack comes on in order to avoid too quickly sliding into 2nd crack. Or, to preheat to 250 degrees before adding beans. Immediate cooling is a big plus: no longer have to anticipate shutting down power then coasting to the degree of roast really intended. Wasted too many lots with the underpowered Behmor because I could not get to 1st crack. And, after learning to reduce quantities, preheat and such, became concerned with how much time beans were spending in the roaster. Cooking, not roasting.

So, all that is history with the full control the Hottop gives. But, would I have known the value of that control and how to best deploy it had I not gone through those intermediate steps? It is a journey.

Finally, I chose the B rather than the much more expensive P model because the only difference was in the ability to program and to save more programs. Machine, heat elements, etc are all identical. Roasting, seems to me, is not really a repeatable, once-you-have-a-great-result-do-it-identically-the-next-time sort of thing. And, since I think the roaster is the operator and not the machine -- that is, we must be tuned in to what's going on -- what good is that programmability? The "basic model" seems to me to be tailored to the "premium" approach to roasting. But, then, I am also cheap.
